LIME POSSET WITH FRESH RASPBERRIES



INGREDIENTS

  • 2 cups heÄvy creÄm
  • 2/3 cup grÄnulÄted sugÄr
  • 5 tbsp. fresh-squeezed lime juice
  • Zest of 1-2 limes
  • Fresh rÄspberries

INSTRUCTIONS

  1. In Ä smÄll sÄucepÄn, bring the creÄm Änd sugÄr to Ä boil, stirring to dissolve the sugÄr. Continue to boil for 5 minutes - WÄTCH CLOSELY SO THE CREÄM DOES NOT BOIL OVER.
  2. Remove the pÄn from the heÄt Änd stir in the lime juice. Ällow to cool for 15 minutes.
  3. Evenly divide the mixture between 4 serving contÄiners. RefrigerÄte for Ät leÄst 2 hours, or until set.
  4. To serve, gÄrnish with lime zest Änd Ä few fresh rÄspberries.
