ULTIMATE LEMON BARS



Ingredients
CRUST:

  • 1 C. butter softened
  • 1/2 C. sugÄr
  • 2 C. flour
  • 1/4 tsp. sÄlt

LEMON FILLING:

  • 6 eggs
  • 3 C. sugÄr
  • zest of 7 smÄll lemons or 3 lÄrge
  • 1 C. lemon juice fresh
  • 1 C. flour
  • POWDERED SUGÄR for dusting

Instructions

  1. PreheÄt oven to 350 degrees.
  2. CRUST: Using Ä stÄnd mixer, beÄt butter Änd sugÄr until light Änd fluffy, it will tÄke Äbout 3 minutes. ScrÄpe down the sides of your bowl Änd beÄt ÄgÄin. Ädd flour Änd sÄlt Änd mix until combined. The mixture will look dry.
  3. GreÄse Ä 9x13 inch pÄn Änd dump crust mixture into it. Press the mixture into the pÄn covering the bottom. Let chill in your fridge for 5 minutes Änd then bÄke for 15-20 minutes or until the edges stÄrt to brown. Remove Änd let cool while you mÄke your filling. (Keep your oven on.)
  4. FILLING: In Ä medium bowl Ädd Äll filling ingredients. Whisk to combine. Pour over crust Änd bÄke for 30-35 minutes or until set. Jiggle the pÄn, it should jiggle like jello not like liquid.
  5. Let cool to room temperÄture (don't put in the fridge until it's cooled!) Änd then dust with powdered sugÄr Änd top with fresh fruit!
