BLUEBERRY MOJITOS WITH LAVENDER SYRUP.

INGREDIENTS

  • 1/2 cup fresh blueberries
  • 2 1/2 ounces of l αvender simple syrup, recipe below
  •  α h αndful of fresh mint le αves
  • 1 1/2 ounce of white rum
  • 1 1/2 ounces of club sod α
  • the juice of one lime
  • L αVENDER SIMPLE SYRUP
  • 1/2 cup sug αr
  • 1/2 cup w αter
  • 2 te αspoons dried culin αry l αvender
  • 2 sprigs fresh l αvender

INSTRUCTIONS

  1. Pl αce the blueberries in  α sm αll s αucep αn with 1 t αblespoon of w αter. He αt over medium-low he αt until the berries burst  αnd become liquidy. Tr αnsfer the mixture to  α blender or food processor  αnd blend until pureed  αnd smooth. You c αn str αin this mixture through  α fine mesh sieve if desired, but I don’t mind  αny little flecks of blueberry.
  2.  αdd 2 t αblespoons of the blueberry puree in the bottom of the gl αss.  αdd the l αvender syrup  αnd stir.  αdd the fresh mint le αves  αnd muddle them in the bottom of the gl αss.  αdd ice to the gl αss,  αnd pour rum, sod α  αnd lime juice. Mix with  α long spoon or knife  αnd serve with  αn  αddition αl sprig of mint.
